Bob's Red Mill Review + Giveaway

A while back I signed up for and received 4 free product coupons for Bob's Red Mill products, and I just now got around to trying them out!

Here are the three I "purchased":

First up is the gluten-free Pancake Mix.

I have no known allergies to gluten, but I'm all for healthy products and alternative food sources.  The mix made some thick, yummy pancakes! I added a dash of vanilla to the second batch, and it gave the hotcakes a little extra flavor.  A huge plus for me is that they absorbed syrup (Maine maple syrup...yum!) like a sponge!

The only downside that I encountered is that the pancakes came out a tad bit grainy.  I opted to whisk them by hand instead of using a blender (it gave both options on the packaging), so my advice is if you like your pancakes silky-smooth to use some form of blender.

Up next is the Gluten Free Chocolate Cake Mix.

Chocolate cake- what's not to like, am I right?  I decided to give another gluten-free goodie a tr, and made them into cupcakes since I don't currently have any 8" cake pans.  I had an interesting experience while mixing all the ingredients together. At first, I was shocked that it called for things like fresh lemon juice mixed in milk. While in the final stages of mixing, the batter smelled fairly strongly of raw tomatoes. Yep, tomatoes. I nearly threw the whole batch away thinking "There's NO WAY this can come out good..."

Boy, was I was wrong.

The mix makes about 16-18 cupcakes, and these were so freakin' fabulous I didn't even bother frosting them.  Even Hubs devoured a few before I could tell him that they're gluten free and made with lactose-free milk. (He usually turns up his nose at anything "healthy-ish")  They're moist, super-flavorful without being overly sweet, and pretty darn good for you, too.

Last on my list of goodies to try is the Muesli cereal mix, which I haven't reviewed quite yet as I'm saving it to bake into some holiday cookies later this week. Yum!  All mixes, flours, and grains made by Bob's Red Mill are so versitile, it's amazing!
