Motivation Monday ~ Processed Junk

Though I love healthy & fresh foods, it's hard to stay away from processed junk when the rest of your family enjoys recipes from companies like Chef Boyardee, Velveeta, and Kraft.



My biggest challenge with the Fit for 2012 Challenge is to turn those calorie-laden, artery-clogging nightly casseroles into something healthful, yet still tasty to all family members.


I'm hoping to try this amazing-looking recipe for Basil Pesto Chicken soon...yum!

Also, I stumbled upon this on Pinterest and love it. (I just started with Pinterest, and YES, it is crack.)
