Breakfast Burrito & Egg Salad

Following in my trend of  mostly-healthy recipes, I thought I'd share these two with you.


I few days ago, I made a quite-delicious breakfast burrito out of veggies and things I had on-hand. Then today, in my search for the perfect lunch, I decided to make an egg salad.

First things first,mayo is not on my list of "delicious foods."  I was browsing the net to find a recipe with very little of the white stuff, but none I found looked terribly appetizing. So I made my own!

Egg Breakfast Burrito:

3 eggs, scrambled (for less fat, use egg whites only)
1 Tbs fiesta/taco seasoning (can also use cumin, chili powder, seasonings of choice)
1/4 small onion, chopped
1/4 bell pepper (red, orange, green, yellow, doesn't matter), washed and chopped
1-2 stalks green onion, washed and chopped
Flour tortillas
Cheese and light sour cream for topping

Lightly beat eggs and pour into nonstick frying pan. Add onion, bell pepper, and seasoning and scramble until eggs are cooked. Spoon 1/3 - 1/2 mixture onto warm tortilla and top with cheese, sour cream, and green onions. Add salsa, if desired. Wrap and enjoy!

Light Egg Salad:

6 eggs, hardboiled and peeled (for less fat, use egg whites only)
2 stalks celery, washed and chopped
1/4 onion, finely chopped (red works best, I used white)
1-2 stalks green onion, washed and chopped
3 Tbs light mayonaise
Salt, pepper, and chili powder to taste

Chop eggs and combine with celery, onion, and green onion. Stir in mayo. Add seasonings to taste. Spread on whole wheat bread and enjoy!
