My thoughts:

Author Melinda Hinson Neely brings to light the basics of eating healthy, keeping a healthy kitchen, and much more! Her personal stories are insightful and fun to read and remind me constantly while reading that no one is kitchen-perfect. Eat In, Not Out walks us through nutrition basics, prepping your kitchen, left and right-brain aspects of cooking (ie- quantitative and qualitative), when and where to stock up on fresh foods, and even teaching your children the ways of the kitchen. Instead of just providing recipes like so many other cookbooks already do, Melinda provides the tools for living a healthier life! What's the saying..."Give a man a fish and you feed him for a day; teach a man to fish and you feed him for a lifetime."

One section that hit close to home for me was the chapter on cleaning and preparing your kitchen. I have a terrible tendency to impulse buy junk that I think "This would be a perfect addition to such-and-such meal!" It then sits and takes up space in our cupboard until I notice that it expired years months ago and toss it. If I had kept on top of keeping the cabinets clean and organized, I might have noticed and used that package of curry sauce when I had stir-fry veggies on hand. Also, Melinda mentions the importance of  "loving the kitchen you're with." My current kitchen is a far cry from my ideal stainless steel with marble counter tops and ample space, but to work efficiently in the kitchen I'm coming to terms and accepting what I have to work with.
