If you're anything like me you know how hard it can be to come up with edible dinner ideas night after night when you're not a menu-planning-mama. I've tried in the past to sit down once a week and plan each day's meals, but it never seems to stick. I guess I can chalk it up to me being a fly by the seat of her pants kinda lady.

Anyway, I was trying to come up with something last night, combined a few ingredients, and it came out pretty tasty! It's basically a meal starter with a hamburger base, it's quite versatile. We ate this last night with tortilla strips, cheese, and a side of sweet corn. Yum! A few other ideas:
*Fold inside of flour tortillas with salsa and sour cream
*Add to a fresh garden salad with grilled corn and salsa for a fiesta salad.
*Add to a casserole dish topped with Spanish rice, black beans, fiesta corn, chopped tomatoes with green chilies, and cheese.
*Sandwiched between two tortillas with cheese for a yummy quesadilla
The options are endless! And best of all, you don't need any special pre-made spice mixes. All you need are a few basic spices, some veggies, hamburger or chicken, and tomato sauce. Enjoy!
Easy Mexican Dinner Starter

- 1 lb ground beef
- 1/2 medium white or yellow onion, chopped
- 1 garlic clove, peeled and minced
- 1 green bell pepper, chopped
- 1 8oz can tomato sauce
- 1 Tbsp chili powder
- 1 tsp cumin
Brown ground beef in skillet until no longer pink. Set ground beef aside in small bowl. In same skillet, saute green pepper, garlic, and onions in a little oil and cook until onions are soft. Add ground beef, tomato sauce, and spices to skillet and stir to combine. Heat on low/medium heat for about 5 minutes, then prepare as desired.
It may sound super simple, and it is! This dish starter has a zesty Mexican flavor thanks to the spices used, and Mexican food is a big hit in our household, even with the munchkin! I hope you enjoy this as much as we did, we'll definitely be using this again and again!
