My gracious mother recently shared this recipe with me from Pinterest and I am pleased to say that it came out fantastic!
Whether you're watching your weight or just on the hunt for a cool, tasty snack, these mini frozen cups are a sure hit! The recipe only calls for 3 ingredients, which makes these just about the easiest dessert to make in my book, and makes about 24 mini cups or 12 regular muffin cups. Each mini cups rings in at a little under 1 Weight Watchers point, with 3 mini cups equating about 3 WW points. You can reduce the point/sugar count a small amount by using sugar-free chocolate syrup, too!
Frozen Whipped Peanut Butter Cups
1 small tub (8 oz) fat free Cool Whip
3 Tbsp peanut butter
2 Tbsp chocolate syrup for drizzling
Line a mini muffin pan with paper liners. (You can use a regular muffin pan, it will just make 12 cups instead of 24 mini) Use minion labor whenever possible:
In a medium bowl, mix the Cool Whip and peanut butter completely. It will take a little time for the peanut butter to assimilate into the cream. The Cool Whip will turn a very light brown color when you're done.
Spoon the mixture into paper liners. We filled ours almost to the top!
Put the chocolate syrup in a small ziploc baggie and cut the tip, giving you a little pastry bag. Drizzle the chocolate over each filled cup.
Put the entire muffin tin in the freezer until frozen, and enjoy! For storage, we keep ours in a food storage container in the freezer. These make such a delightful snack on a hot summer day, and I think they taste a lot like Reese's Pieces candies!
